The weekends were meant for waffles! Something about waffles brings me right back to childhood. The memory of Saturday mornings with my family spent making waffles, pancakes and fresh orange juice. I hope to recreate that memory with my family and yours. A no-fuss waffle recipe that is quick, easy and kid-friendly. Let’s keep the Saturday mornings memorable!

Makes: 3 waffles
Using a stand up mixer or large mixing bowl mix the following into a bowl.
Wet ingredients:
1C cottage cheese
3 eggs
3 tbsp avocado oil
1/4c whole milk
Once this is fully mixed and relatively smooth. Add all the dry ingredients and mix well.
Dry ingredients:
1 1/4c all-purpose flour
1 tbsp coconut sugar
1 tsp baking powder
1 tsp cinnamon
Spread a thin layer of avocado oil or butter on the waffle maker. Then scoop ¾ cup of the waffle mixture onto the waffle maker. Close and allow the waffle maker to cook. End result should be a slightly brown waffle cooked all the way through. Top waffles with fresh berries, greek yogurt or maple syrup. Enjoy!
