I can’t be the only one that wants a little sweet treat at the end of the day, can I? My husband always laughs at me because he finds it a little bizarre that I always have a piece of chocolate each night. But for one, he’s not a sweets guy so he doesn’t get it and two this habit runs in my family so it can’t be that strange. We grew up loving dark chocolate thanks to my parents. There was a drawer with the dark chocolate bars and everyone always had a piece at the end of the night. Now that we have all moved out we each have our own chocolate drawer at our houses. Why I share this story with you is because I ran out of my favourite dark chocolate bars and that doesn’t happen too often so from that little mistake these delicious peanut butter cups were born.

As you know, I keep my ingredients minimal and common. So when the craving strikes you have just what you need. My healthy spin on a classic treat has the perfect balance of carbohydrates (sugar) with fat, protein and fibre. Making these treats not only more satisfying but also it will help slow digestion to keep your sugar levels at bay. A simple, satisfying treat that your body will thank you for.

First, line a baking sheet with parchment paper. Using a medium sized mixing bowl mix the peanut butter, maple syrup, oat flour or processed oats. You want the mixture thick enough to roll. Next roll into small balls and gently flatten into little discs. I found it easier to roll with wet hands but your choice! Freeze for 15-20 mins.
While that is in the freezer. Put the chocolate chips and coconut oil in a small pot. Turn the burner to low and slowly melt the chocolate and coconut oil. Make sure to stir often.
Once melted, dip each peanut butter piece into the chocolate and return to the parchment paper baking sheet. Sprinkle it with sea salt. Refrigerate until chocolate is firm.

Ingredients:
1C semi-sweet chocolate chips
2 tsp coconut oil
1/2C peanut butter
2 tbsp maple syrup
3 tbsp oat flour or processed oats into flour
Pinch of sea salt
