We are putting a little twist on taco night tonight with these high protein, gut-friendly stuffed taco sweet potatoes. This recipe is naturally gluten-free and can be made vegan by swamping the ground beef for black beans. Nourishing, comforting and so satisfying!

Set the oven to 400F. Line the baking pan with parchment paper. Drizzle sweet potatoes with avocado oil and poke a few holes with a fork. Lay them on the baking pan and bake for 45-60 mins.
While the sweet potatoes are baking, cook the ground beef. Turn the stovetop to medium heat. Using a pan add avocado oil, chopped white onion and minced garlic. Sautéed until garlic is slightly brown and onions are translucent. Add the ground beef and let it cook for about 3 mins while you break it apart. Then add the spices – chili powder, paprika, cumin and sea salt. Once the ground beef is fully cooked take it off the burner and set aside. Follow these same instructions for black beans.
For the salsa, add minced garlic and finely chopped onion to a medium sized bowl. Next quarter the cherry tomatoes and add it to the bowl. Chop the red pepper into ¼ inch cubes and add to the bowl. Add chopped cilantro, sea salt and pepper. Mix it all together.
For the chipotle mayo, add mayo, lime juice and chipotle powder to a small bowl. Whisk all together.
Cut romaine into shredded pieces.
Once the sweet potatoes are ready it’s time to assemble. Slice the sweet potato in half and half way down. Add 2-3 tbsp ground beef, 3 tbsp of romaine, 2 tbsp salsa and drizzle with chipotle mayo.

2 tsp paprika

½ tsp sea salt
Salsa
1 garlic clove
¼ red onion
20 cherry tomatoes
½ red pepper
1-2 tbsp cilantro
½ tsp sea salt
¼ tsp black pepper
Chipotle mayo
¼ C vegan mayo or regular mayo
1 tbsp lime juice
½ – 1 tbsp chipotle
Assemble
Sweet potatoes
Ground beef
Romaine lettuce
Salsa
Drizzle chipotle mayo
