Another spring favourite! My glazed lemon poppyseed loaf. I created this for our Easter celebration and it did not disappoint. Light, fluffy and the perfect amount of sweetness.

Apply a thin layer of butter to an 8 x 4inch loaf pan. In a stand up mixer or large bowl whisk the following together coconut milk, melted butter, egg, lemon juice and zest. Then add all purpose flour, cane sugar, poppy seeds, baking powder and sea salt. Once it is whisked well and without clumps transfer to the loaf pan. Put loaf in the preheated oven and bake for 45 mins.
Preheat: 350F
Bake: 45 mins
Makes: 1 loaf
Ingredients:
1C coconut milk or whole milk
1/4C melted butter
1 egg
1 large lemon zest & juice
1 3/C all-purpose flour
3/4C cane sugar
2 tbsp poppy seeds
½ tsp sea salt
While the loaf is baking make the glaze. In a small mixing bowl combine icing sugar and lemon juice. Whisk until it becomes a smooth texture. Once the loaf is completely cooled pour glaze over the loaf. Cut, serve & enjoy!

1/2C icing sugar
1 tbsp lemon juice
