My husband was craving a soup & sandwich today so I give him the credit for today’s inspiration. I had freshly made chicken bone broth so I paired it with onion, garlic , cremini mushrooms, fresh herbs and spices. I paired the soup with a sharp cheddar grilled cheese. Very simple ingredients but the flavours were oh-so satisfying. I whipped this up in under 20 mins so if you are in need of something quick and easy this is the recipe for you!

Using a medium to large size pot add avocado oil, onion, garlic, sea salt and pepper. Sauté on medium heat for about 5 minutes. The onions turn translucent and the garlic will brown. Next add the sliced mushrooms and continue to cook for another 3 minutes or until mushrooms begin to brown. Next add the chicken bone broth and fresh thyme. Bring to a boil and then simmer for 20 mins. Add the soup to a blender along with all-purpose flour. This may have to be done in stages if it doesn’t all fit in your blender. You don’t want your blender too full! Blend until it has small pieces of veggies (around 10 seconds). Pour back into the pot and add cream. Whisk until it’s all incorporated. Let cool slightly before serving.

3 garlic cloves, minced

12 cremini mushrooms, sliced
4C chicken bone broth
3 springs of fresh thyme
¼ C all-purpose flour
