Hello September and hello apple season! A cool Saturday morning calls for comforting apple cinnamon french toast paired with local maple syrup…yum! I went to the Saturday farmer’s market this morning to be first in line for honey crisp apples. I was starving by the time I came back so french toast it is! Here is a comforting, delicious fall french toast recipe.

I used honey crisp apples for the sweetness and crispness but you can choose whichever kind of apple you desire. First, chop the apple into bite-sized pieces and then toss them in cinnamon and vanilla. Using a small pan, add butter and apple pieces. Turn to temperature on the stove to medium. Stir and cook for 5-8 mins until soft and slightly golden brown. In the meantime, using a square baking dish add the french toast ingredients – eggs, milk, maple syrup, vanilla extract, and cinnamon to the baking dish. Whisk well so all ingredients are combined. Soak the sourdough slice in the french toast mixture. Make sure both sides are covered.
Once the apples have finished cooking, put them aside in a bowl. Add more butter to the pan and add sourdough to pan. Cook on each side for about 3 -5 mins until they are browned. Once all slices and sides are cooked, place them on plates and split the apples between the two plates. Sprinkle them with cinnamon and add a drizzle of maple syrup. Serve and enjoy!

Ingredients:
For the apples:
2 tbsp butter
2 apples, cut in bite-size chunks
2 tsp cinnamon
½ tsp vanilla bean powder
French toast:
2 eggs
¼ c of milk
2 tbsp maple syrup
½ tbsp vanilla extract
½ tsp cinnamon
4 slices of thick sourdough bread
2 tbsp butter
