An easy and quick energy bar. No baking necessary with these little treats. These bars are filled with healthy fat, protein and fiber. Making them a perfect pre or post workout fuel or an afternoon pick-me-up!

Line a 12 x 8 x 2 brownie pan with parchment paper. My trick to getting the parchment paper to stay is to apply a thin layer of coconut oil to the pan then add parchment paper and press the paper into the pan. The coconut oil will make the paper stick to the pan.
First, soak the dates in hot water for 2 mins and then put them aside. Using a processor, process oats into a flour (around 30 seconds). Then add cashews, hemp seeds, cinnamon, and sea salt and process so that it is all well combined. Next add the soaked dates into the processer BUT FIRST squish each date in your hand to make sure there are NO PITS! Once again, process the dates until they turn to small pieces. Next add the raw cacao nibs and pulse 5 times. Add the almond butter and process for 10 seconds. Lastly, add the maple syrup and process for 10 seconds.
Transfer the mixture to a large bowl and mix with your hands so that it is well combined. The mixture should hold easily together. Once mixed, transfer to the lined pan and press into pan. Smooth out the top with the back of a spoon so that it is completely flat and even. Once the bar is flattened, transfer the pan to the freezer and let it set for 30 mins. After 30 mins, remove the bar from the pan and put onto a cutting board to cut into even bars.

1C oats processed to flour
3C cashews
1/2C hemp seeds
2 tsp cinnamon
½ tsp sea salt
1C soaked dates
3 tbsp cacao nibs
¼ C almond butter
¼ C maple syrup
