A delicious autumn salad paired with a sweet ginger dressing. Perfect for this crisp, sunny weather. This salad is refreshing with a slight kick and a delicious sweetness. Truly it has everything that your body craves this time of year. The dressing will make around 12oz so there is plenty left over for future salads!

Preheat the oven to 300F. Cover a small baking pan with parchment paper. Using a small bowl add the pecans and maple syrup and toss so that they are evenly covered. Bake for 10-15 minutes until they are slightly crisp and the maple syrup is stuck to the pecans.
In a high speed blender, blend all ingredients for the dressing. Store in a 16oz mason jar.
For the salad, add mixed greens or arugula to a medium sized salad bowl. Then chop the honey crisp apples into 1 inch cubes. Add baked pecans and goat cheese. Then drizzle ginger dressing and mix well.

1C olive oil
¼ C apple cider vinegar
2 tbsp dijon mustard
2 ½ tbsp maple syrup
¼ tsp sea salt
¼ tsp black pepper
1” x ¼ “ piece of ginger
