Fresh out the oven morning glory muffins! These muffins are slightly sweet, moist and filled with comfort. An easy on-the-run breakfast that is filled with fiber and nourishing goodness.

Line or grease a muffin tray. Set the oven to 350 degrees.
Using a stand up mixer or mixing bowl add eggs, apple sauce, avocado oil, maple syrup, and almond milk. Mix on medium speed until all ingredients are incorporated and the mixture is smooth. Then add coconut sugar, almond flour, all purpose flour, rolled oats, sea salt and cinnamon. Once again, mix well until everything is well combined. Fold in the remaining ingredients – shredded carrots, raisins and walnut pieces.
Fill each muffin cavity ¾ the way. Set in the preheated oven and bake for 30 mins. Remove after 30 mins and let cool before enjoying!

3 tbsp avocado oil
1/2c coconut sugar
2-3 tbsp maple syrup
3/4c almond milk
½ tsp sea salt
1 tsp cinnamon
1 tbsp baking powder
1 3/4c almond flour
1 1/4c all purpose flour
1/14c rolled oats
½ c shredded carrot
1/4c raisins
1/4c walnuts pieces
