Chunky, creamy guacamole! Summertime apps are my favourite. So fresh, vibrant and refreshing. This guacamole is no exception. I used fresh cilantro, peppers, garlic and jalapenos straight from my garden. I simply whipped it up in 10 minutes and served it with chips. Such an easy family favourite. Bonus- it’s packed with healthy fat and fibre too!

Scoop 3 avocados into a medium bowl. Make sure there are no pits! Then chop jalapeno, red onion, pepper into small pieces and add to the bowl. Mince and finely chop both garlic and cilantro and add to the bowl. Juice one lime and add salt and pepper. Mash and mix well together until it is well combined with some chunks still left. Serve with tortilla chips or fresh veggies!
Ingredients:
3 avocados
1 jalpeno,chopped without seeds
2 garlic cloves, minced
½ medium red onion, chopped
1 pepper, chopped
¼ tsp sea salt
¼ tsp pepper
Juice of 1 lime
2 tbsp cilantro
