A classic chocolate chip cookie made gluten free & refined sugar-free! Made with one of my favourite sugars – coconut sugar. Very similar in flavour to brown sugar however coconut sugar is low on the glycemic index meaning that your sugar levels will not spike. Paired with the high fat from the almond flour and butter, we are able to enjoy these with no sugar crashes. One of the reasons why these cookies are my favourite afternoon delight. I hope you enjoy them as much as I do!

Preheat the oven to 350F. Line the baking pan with parchment paper. In a stand mixer add the melted butter and 1 egg. Whisk until smooth. Then add almond milk, coconut sugar, vanilla extract, almond flour, baking soda, cinnamon, sea salt. Whisk well so everything is well combined. Lastly, fold in Chocolate chips. Scoop 2 tablespoons for each cookie. Roll into a ball and lightly flatten each cookie so they are 2 inches wide. Bake & enjoy!

1 egg
2 tbsp almond milk
1/3C coconut sugar
1 tbsp vanilla extract
1 ½ C almond flour
½ Tsp baking soda
