An easy high protein breakfast recipe. Lately, I have been trying to prepare both my breakfast and lunch ahead of time to make it a little easier during the day with the baby. First nap of the day I like to get my workout done. Having a high protein breakfast readily available in the fridge before I have to put the baby down has been super convenient. It took less than 10 minutes to prepare these bites and only 20 mins to bake. Easy, delicious and 6 grams of protein per bite!

Preheat the oven to 350F. Lightly oil or butter muffin tray. I used a thin layer of avocado oil. Use a medium sized mix bowl, crack 8 eggs into it. Then add milk, sea salt and pepper. Whisk well and then add the remaining ingredients – shredded spinach, feta cheese and bacon. Fill each muffin cavity ¾ of the way up. Place in the preheated oven for 20-22 mins. Let cool slightly and serve. Store in the fridge in an air-tight container.

Ingredients:
2-3 tbsp avocado oil
8 eggs
½C of milk
¼ tsp sea salt
¼ tsp black pepper
1C shredded spinach
