A high fibrous, comforting sweet muffin. Pair it with your morning coffee to help get you through these cool winter mornings. For this recipe I kept the ingredients very simple so that most would have these ingredients at home. So if you’re in need of a little comfort to get you through this cold winter this is the recipe for you!

Preheat the oven to 375F. Line or grease a muffin pan and put aside.
Using a stand up mixer or large bowl add the rolled oats and whole organic milk. Let it sit for 10 minutes. This helps keep the muffins nice and moist!
Using a separate medium sized bowl add all the dry ingredients – all purpose flour, baking powder, baking soda, cinnamon and sea salt and mix well together then set aside.
Add eggs, maple syrup, and avocado oil into the stand up mixer or large bowl with the oats and milk. Whisk all together at medium speed. Next add the dry ingredients to the mixer and continue to mix on medium speed. Lastly, fold in the raisins or chocolate chips.
Using your lined muffin tray add the mixture to the muffin cavity. Fill each one 3/4s of the way up. Put the muffin tray in a preheated oven and bake for 15-20 mins.

11/2 tsp baking powder
½ tsp baking soda
1 tsp cinnamon
¼ tsp sea salt
1 egg
1/3 C maple syrup
1/4C avocado oil
¾ C raisins or chocolate chips
