Lazy weekend mornings paired with banana chocolate chip pancakes, yes please! I am at the beginning of my third trimester and I am finding my body starting to slow down. So on the weekends we have been intentionally slowing down our mornings. Not filling our schedule but allowing our day to unfold as we please. This morning I decided to whip up some deliciously sweet banana chocolate chip pancakes. It hit just right for this pregnant momma!

Using a standup mixer, whisk the egg, milk, banana and vanilla extract together. Next add all purpose flour, coconut sugar, baking powder, sea salt and cinnamon. Mix together until well combined and it should resemble a cake-like batter consistency. Next fold in chocolate chips.
Using a pan, add avocado oil and turn the burner to medium. Let warm up for 3 mins and then add 1/3C of the pancake mixture onto the pan. Let cook for 2-3 mins and then flip and repeat. Serve with fresh bananas and maple syrup.

1 ¼ C milk
1 egg
2 bananas
2 tsp vanilla extract
1 ½ C all-purpose flour
2 tbsp coconut sugar
1 tbsp baking powder
½ tsp sea salt
1 tsp of cinnamon
